From the initial proposal stage, Norina will work very closely with each association conference organiser to ensure conference goals are achieved.  Listening to your specific requirements which are unique to each conference, discussing in detail options, budgets and outline suitable recommendations.

Jan will be your dedicated hotel contact during the course of your conference.  From greeting you in the morning with a friendly smile, ensuring all conference setups are correct and supporting you from beginning to end of your conference with us, delivering on your expectations, and exceeding where possible.

Mariska Smit

Senior Conference Co-ordinator

Mariska will have her eye on the detail when it comes to the planning and the pre-organisation of your conference.  She will be one of the friendly faces you meet at your preplanning meetings. She will be on hand to answer your queries and will be at the end of the phone should you require last-minute adjustments to requirements.

Stuart Dardis

Head Chef


Head Chef, Stuart Dardis has had a passion for food from a young age. Stuart grew up in Lucan, Co. Dublin and started his culinary career in Finnstown Castle Hotel, Dublin at the young age of Sixteen.
There he developed his passion for food and to cook with creativity. Stuart decided to leave Dublin and move to Cork, to work in The Cork International Hotel and from there to Kerry to the Parknasilla Resort & Spa. After spending some time in Kerry he relocated back to Cork and worked in the Metropole Hotel Cork City.
In August 2021, Stuart made the move to Clayton Hotel Silver Springs, to take up the role of Executive Head Chef. Stuart has a passion for inspiring others to cook with creativity and flair.
When not cooking or talking about food, Stuart enjoys spending time with his children.
